요리하는 방송, '쿡방'이 대세다. 

하루 중 언제라도 인터넷과 텔레비전의 수많은 채널 중

어디선가는 반드시 누군가가 음식을 만들고 있다.

내 입으로 들어가는 것도 아닌데, 맛있는 음식을 요리하는 모습은 보기만 해도 즐거워진다.

특히, 평범한 식재료로 놀라운 음식을 차려내는 요리사들을 보면 식욕과 함께 존경심도 샘솟는다.

17세기 프랑스의 판화가이자 출판업자였던 니콜라 드 라르므생 1세

(Nicolas I de Larmessin·1632~1694)는 당시 사회에서 각광받던 직업 25종의 세세한 면모를

과장된 의상 디자인으로 보여주는 판화집을 만들었다.

 화가, 약사, 정원사, 점성술사 등과 더불어 판화집에 등장한 요리사의 모습은 과연 한눈에

그의 직업을 말해준다.

 

모자 위의 커다란 접시에는 통돼지구이를 얹었고, 오른팔에 받쳐 든 쟁반에는 온갖 과일을

꽃꽂이하듯 소담하게 쌓았다. 소시지를 휘장처럼 가슴에 두른 요리사는 기나긴 팬을

어깨에 걸치고, 포크와 칼을 비롯한 온갖 조리 도구를 발끝까지 갑옷처럼 차려입은 채,

들판을 지나 주방으로 행진할 모양이다.

요리, 즉 날것의 재료를 여러 방식으로 가공해 먹기 시작한 건 무려 현생 인류 이전,

50만년 전이라고 알려져 있으나, 이를 위해 일정 기간의 훈련을 거쳐 전문인으로 인정받는

직업으로서의 요리사가 서구에 등장한 건 중세 이후라고 한다.

이 판화는 '요리사'라는 직업의 역사를 설명하는 중요한 사례다.

소장가는 앤 윌런 부부다. 윌런은 프랑스에 유명 요리 학교를 설립한 요리사로서

수십 권의 요리책은 물론 음식의 역사도 출판해 훈장을 받았다.

먹고사는 것만큼, 잘 먹이고 사는 걸 중시한 공로다.

니콜라 드 라르므생 1세

Nicolas I de Larmessin

1632 년에 태어나 1694 년에 사망한 라르메신의 니콜라스 2세 라르메신 ( Nicolas de Larmessin) 

또는 니콜라스 1세 ( Nicolas I) 로 불리는 니콜라스 2세 라르메신 (Nicolas II de Larmessin )은 

프랑스 파리 의 La Pomme d' Or 라는 이름으로 프랑스 조각사 이자 출판사 입니다.

그는 주로 파라 몬트 에서 루이 14 세 , 프랑스 의 여왕 과 여러 교황에 이르기까지 

프랑스 의 왕을 묘사 한 그의 판화 와 그로테스크 한 의상으로 알려진 보드로 유명합니다.

그의 가장 유명한 작품은 Grotesque Costumes 라는 판자입니다.
